Jalapeno Popper Corn Salad - crazy delicious creamy corn salad. I made this for a cookout and it was gone in a flash! I should have doubled the recipe!! Corn, jalapenos, bacon, mayonnaise, cream cheese, sour cream, onion, garlic, chili powder, paprika, pepper jack cheese, and cheddar cheese. Can make in advance and refrigerate overnight. A real crowd pleaser!

Summer is unofficially here and we couldn't be happier. We love cooking on the grill and having friends over. We had a few people over for Memorial Day earlier this week. It was so much fun! We grilled some delicious burgers, but the star of the cookout was this yummy Jalapeno Popper Corn Salad. I should have doubled the recipe because it didn't last long!

How to Make Jalapeno Popper Corn Salad
This Jalapeno Popper Corn Salad is super simple to make. Simply chop the jalapenos and combine with the remaining ingredients. It literally took me about 5 minutes to make this yummy side dish.To cut down on the heat in this dish, make sure to discard the seeds and membranes in the jalapenos. I also recommend wearing gloves when chopping the peppers and don't touch your face! It will BURN!
For the corn, you can use fresh corn kernels, thawed frozen corn kernel or canned corn. You can use white or yellow corn or a combination of both. Just use your favorite type of corn.
